BBQ Chicken Tostadas Recipe

  Serves 4

Pick up a rotisserie chicken from the store, use up leftovers, or even make a new batch in your slow cooker to make this easy dinner recipe the family will love.

Ingredients

  • 8 tostada shells (or 8 corn tortillas, brushed lightly with olive oil and baked for 3-5 minutes per side, until crispy)
  • 3 cups cooked and shredded chicken
  • 1 1/2 cups of your favorite barbecue sauce, divided
  • 2 cups shredded cheese (Mary uses mozzarella in the cookbook, but I have also used cheddar, Monterey Jack, or a blend)
  • 3 green onions, very thinly sliced (optional)

Easy Chicken Flautas



These Chicken Flautas are a great dinner if you don’t have a lot of time but still want a family-pleasing meal. I love dipping these in sour cream or salsa!

Chicken Flautas are surprisingly filling and one batch goes a long way. It can feed a family for dinner or you can freeze/refrigerate for snacks throughout the week. Little kids will only eat one for a snack after school, but teenagers will eat a lot more!  It’s a much better after school snack than if my kids went for something loaded with sugar.  With all the cheese and chicken inside these are loaded with protein. We love dipping Chicken Flautas in sour cream, salsa, guacamole, and/or ranch dressing.

Turkey Avocado Ranch Club Wraps are easy to assemble, very quick to make, and taste incredible!

Another huge mom win has been these turkey ranch club wraps. My kids are totally obsessed with them and I’d be lying if I didn’t say they’ve been my lunch on repeat for the past couple of weeks.

Hidden Valley® came out with a new line of products called Simply Ranch and I’m using the Original Classic Ranch for these wraps. I also tried the other two flavors (Cucumber Basil Ranch and Chili Lime Ranch) and can’t recommend them enough — they are amazing! This new line is made without any artificial preservatives, flavors, or colors and still have that great ranch taste you can expect from Hidden Valley. The ranch is made with real ingredients (buttermilk, garlic, onion, herbs, spices, etc.) and you really can taste them in this dressing.

Easy Pancake Muffin Bites are made in a muffin tin and are as easy and quick or as custom and homemade as you’d like. We make them with my Classic Pantry Pancakes recipe but instead of cooking them in a pan where you have to stand guard and make sure the little ones are not doing anything wrong or coming near the hot stove, you can just fill up a muffin tin and set a timer!

Scrambled Egg



Anyone else struggle with breakfast in the morning? Seriously, the last thing that I want to do is spend a lot of time cooking right when I wake up.  I love to make these egg muffins the night before and then put them in the fridge so that all I have to do is pop them in the microwave and I have a hot breakfast ready to go!

The great thing about these muffins are that you can personalize them to your taste . . . don’t like meat? Leave the meat out! Don’t care for tomatoes? No need to add them! Love tomatoes? Then by all means, add as much as you like! I am including all the things that I added in my muffins, but you can adapt this recipe to whatever you want. My kids’ favorite: ham and cheese.


 Scrambled Egg Recipe

Make a large batch of these muffins and have a healthy to-go breakfast at any time!

Ingredients
  • 12 eggs
  • 1/2 teaspoon seasoned salt
  • 2-3 tablespoons onion, diced
  • 1 cup cooked ham, diced (could also use cooked bacon or cooked sausage)
  • pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 cup red bell pepper, diced
  • 1/4 cup fresh mushrooms, diced (I sauteed mine first)
  • 1 cup shredded cheddar cheese (I use sharp)
  • 1/2 cup baby spinach, finely shredded

German Chocolate Sheet Cake With Coconut-Pecan Frosting




German Chocolate Sheet Cake! Same chocolate cake with gooey coconut-pecan topping, but way easier to make.

Most German Chocolate Cake recipes are multi-layered affairs and therefore time-consuming, so I’ve made some changes to make it a little easier. In an effort to get from Point A to Point Cake more quickly, I bake the cake single 9×13-inch pan and then spread it with a thick layer of coconut pecan frosting — no cutting or stacking of layers required.


German Chocolate Sheet Cake With Coconut-Pecan Frosting Recipe

Ingredients:

For the cake:
  • 2 cups (280 grams) all-purpose flour
  • 1/4 cup (21 grams) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup boiling water
  • 4 ounces unsweetened baking chocolate
  • 1/2 teaspoon espresso powder, optional (for deeper chocolate flavor)
  • 2 cups (400 grams) granulated sugar
  • 4 large eggs
  • 1 cup canola oil
  • 2 teaspoons vanilla extract
For the coconut pecan frosting:
  • 3 large egg yolks
  • 8 ounces evaporated milk
  • 1 1/2 cups (323 grams) lightly packed brown sugar
  • 4 ounces (113 grams, 1 stick) unsalted butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups sweetened, shredded coconut
  • 1 1/2 cups chopped pecans

If you like crisp, caramel,coconut and sweet then these little treats are for you! They’re absolutely delicious and will store for up to a week if you wish to make ahead.

As far as the recipe itself, it’s incredibly easy to do. There are a couple of steps which you must follow carefully, so make sure you read it properly, but nevertheless, it’s nice and easy and quick to make too.
